The Best Knives For Chefs
Most chefs spend a lot of time in meal preparation cutting up fruit and vegetables and meat. They spend hours every day doing the same thing, so it follows they must need knives that keep a sharp edge. This makes the choice of knives they use an important issue as time spent sharpening knives is holding them up in getting meals to the table on time. There are a few excellent choices available on the market for the chef or the main cook at home, with forged, stamped or the newer ceramic knives. They all have good qualities.
Once we have the preferred cookware, serving bowls and trays, we need to look at what we are using for the food preparation. It is good to have at least 3-4 chopping boards on hand for preparing food, so they are each used for only one purpose, especially when it comes to cutting up meat. This then brings us to the knives we are using to do the cutting and if they are the best ones for the different foods they will be used on.
There are many chef knife sets available for kitchens Brisbane and some are extremely sharp, and must be kept out of the reach of young children. Great care must be taken when they are in use to prevent accidents to the user.
Although modern knife sets will look great in any kitchen, it is need that determines the choice made. Forged knives are popular because they hold the sharpened edge for a longer time and they are very strong and durable because of the way they are manufactured. A piece of steel is heated and hammered roughly into the shape of a knife, then reheated cooled and hammered several times to temper the steel thus making it strong and hard to break. Once this process is finished, the steel is shaped into a tapered blade and sharpened to a razor finish, with a bolster between blade and handle, which is added later. The bolster acts as a barrier between the sharp blade and the hand preventing injury in case the knife hits bone and stops but the hand keeps moving forward.
Stamped knives are also a good choice and can be put into a dishwasher as the handle can withstand the heat used in the wash process, but the edges do not hold their sharpness as well as the forged type do. Then we have ceramic knives, which are made of zirconia dioxide, which is pressed and then fired. This produces a blade that then has the edge sharpened on a diamond-grinding wheel. They have handles of wood or plastic added, and rarely need sharpening, are not subject to corrosion, but because they are ceramic they are breakable if they are dropped. All have their own unique properties and are excellent choices.
is camel bone carvings really made from camel bones? is it a solid bone or ground up?
My fiance brought home a camel bone carved statue from Kuwait. I am curious to how it is made. Hopefully they do not kill camels for it. It is a blackish brown color.
Yes, it's made of camel bone. It'd be a pretty odd name otherwise. They do kill camels to make them, but they use the meat and skin as well. By using the bones for carvings nothing is wasted. Well almost nothing, I guess.
Bird, deconstructed: Cooking turkey in parts ensures tender meat, richest gravy (Chicago Sun-Times)
Scrap the fantastical scene running through your head of carving the giant
turkey at the table. For fall-off-the-bone dark meat, succulent white meat and
unparalleled gravy, cook the turkey in parts this year. You lose the carving
photo opp, but “the payoff is tremendous,” says Allen Sternweiler, the chef
and owner of the recently opened Butcher and the Burger, 1021 W. Armitage. You
think restaurants do the Normal Rockwell thing and roast their turkeys whole?
Nope. In the kitchens of the Ritz-Carlton and Four Seasons Chicago, which
combined will feed about 1,300 people on Thanksgiving, chefs break down the
birds …
